Hashimoto City in Wakayama Prefecture is known as a persimmon-producing region where you can experience traditional kakinoha-zushi making. Born as a preserved food utilizing the antibacterial properties of persimmon leaves, kakinoha-zushi consists of mackerel or salmon slices placed on vinegared rice and carefully wrapped in persimmon leaves. In the hands-on workshop, local artisans provide careful one-on-one instruction as you handcraft approximately 10 pieces of kakinoha-zushi. The sushi you make yourself has an exceptional flavor. We also recommend combining your visit with a pilgrimage to Mount Koya.
