Saijō City in Ehime Prefecture is known for 'uchimuki' where underground water from the Ishizuchi Mountain range spontaneously flows throughout the city and has been designated as one of Japan's 100 Selected Waters by the Ministry of Environment. The city has approximately 2,000 spontaneous springs, and the highly transparent water flowing through the waterways is also used as household water. At Uchimuki Plaza, you can freely collect cold spring water, and in summer it provides refreshing coolness like a natural air conditioner. The 'uchimuki' somen noodle stream served here is charming and highly recommended.
