Houtou is a representative local dish of Yamanashi Prefecture, where wide flat noodles are simmered together with pumpkin, root vegetables, and mushrooms in a miso-based broth. It is a historic dish said to have been popularized by Takeda Shingen as battlefield food. You can enjoy it piping hot at specialty restaurants around Kofu Station and in the Kawaguchi Lake area.
