Shoji-ya, founded in 1840, is one of the oldest soba restaurants in Yamagata City. Their hand-made soba uses soba flour from Yamagata Prefecture, featuring strong texture and aromatic richness. The summer specialty is cold soba generously topped with Yamagata's signature 'dashi' (finely chopped condiment of cucumber, eggplant, Japanese ginger, shiso leaf, and other ingredients). The refreshing crispness of the dashi perfectly complements the soba's subtle flavor.
