Inotani Main Store
Inotani, the flagship of Tokushima ramen. A unique style topped with a raw egg in a sweet and spicy pork bone soy sauce soup.
Inotani, said to be the originator of Tokushima ramen, is a renowned restaurant that spread its name nationwide when it opened at the Shin-Yokohama Ramen Museum in 1999. The dish features a rich pork bone soy sauce soup topped with stewed pork belly cooked in a sweet and spicy broth and finished with a raw egg. Tokushima ramen is characterized by this unique, sukiyaki-style flavor that pairs wonderfully with rice. Locally, it's the classic way to 'eat rice as a side to ramen.' It's an opportunity to experience Tokushima food culture, a tradition dating back to the Showa era.
