Compared to farmed eels, the wild eels have firmer meat and a more refined fat content. Slowly grilled over charcoal, the skin becomes crispy while the inside remains fluffy. The luxury of enjoying eels that once swam in the Shimanto River while dining in a tatami room overlooking the river is truly exceptional.
