Hands-on experience making birch syrup by boiling down sap from birch trees in Japan's smallest village
Otoinoshi Village, with a population of about 700, is one of Japan's smallest villages. Birch syrup is made by concentrating sap collected from birch trees in early spring to 40 times its original volume, and is characterized by its unique flavor distinct from maple syrup. At the local workshop, you can experience the entire process from sap collection to syrup concentration, and you can take home the finished product. It's a rare program where you can experience the blessings of Hokkaido's forests with all five senses.
