Okinawa Soba
Okinawa's soul food of thick wheat noodles in a light broth made from pork bone and bonito dashi. Change the flavor with Koreguus.
Okinawa soba is the soul food of Okinawan people, made with unique thick noodles created from wheat flour and alkali (kansui) instead of buckwheat flour, served in a clear broth made from pork bone and bonito flakes. Toppings vary by restaurant and include sanmai-niku (braised pork belly), soki (pork spare ribs), and tebichi (pig's feet). The Okinawan way is to change the flavor with pickled red ginger and Koreguus (island chili peppers pickled in awamori). There are renowned restaurants everywhere from Naha City to remote islands, and the thickness of the noodles and flavor of the broth vary by region.
