Agu pork is an indigenous breed of pig said to have come to Ryukyu from China approximately 600 years ago. Once on the brink of extinction, it has been successfully revived and is now an Okinawan branded pork. Compared to regular pork, it has a lower melting point for fat, characterized by sweet fat that melts in the mouth and rich umami flavor. In shabu-shabu, its refined sweetness is enhanced, while in yakiniku, its aromatic flavor can be fully enjoyed. Course meals featuring Agu pork are popular at restaurants in Yomitan Village and Onna Village, and it pairs exceptionally well with Okinawan awamori.
