Okayama Barazushi is a regional dish of Okayama Prefecture where seasonal ocean and mountain bounty from the Seto Inland Sea are colorfully arranged on vinegared rice. Local fish such as mamakari and Spanish mackerel, vegetables such as lotus root and shiitake mushroom, shredded egg omelette, and shrimp are gorgeously scattered, creating a luxurious dish in both appearance and taste. According to tradition, during the Edo period, common people resisted austerity laws by hiding ingredients under the rice and claiming it was just plain rice. It can be enjoyed at local cuisine restaurants and long-established sushi shops throughout Okayama City.
