Kakinoha-zushi is a representative local dish of Nara Prefecture, consisting of pressed sushi with sliced mackerel or salmon placed on vinegared rice and wrapped in persimmon leaves. The antibacterial properties and fragrance of the persimmon leaves transfer to the vinegared rice, creating a distinctive flavor. It can be purchased at specialty shops around Nara Park and near Kintetsu Nara Station, and is also popular as a souvenir.
