Kibinaigo is a signature seafood delicacy of Kagoshima Prefecture. Though small at about 10 cm in body length, sashimi arranged in chrysanthemum form is beautiful to behold, offering delicate sweetness and subtle oceanic aroma. It can be enjoyed in various preparations including tempura, salt-grilled, and Nanban-style pickles, and pairs exceptionally well with shochu. At local cuisine restaurants in Tenmonkan, visitors can fully experience Kagoshima's food culture through an omakase course featuring kibinaigo dishes. The peak season is spring through early summer, when kibinaigo is said to be especially delicious with its rich fatty character.
