Kagoshima Prefecture is home to over 100 shochu breweries, and it produces more sweet potato shochu than anywhere else in Japan. At breweries throughout the city and surrounding areas, you can tour the entire manufacturing process—from sweet potato processing through koji cultivation, distillation, and storage. You'll learn about the differences in brewing water and koji mold specific to each brewery. During the post-tour tasting, you can experience how different koji types (white koji, black koji, yellow koji) create different flavors. Brewery-exclusive varieties are rare bottles you can only purchase on-site. It's an adult's sophisticated look at the depth and richness of shochu culture.
