Izumo soba is counted as one of Japan's three greatest soba varieties, characterized by dark noodles made using the 'hikigurumi' method, where buckwheat grains are ground with their husks. The most typical way to eat it is warigo soba, where soba served in a three-tiered round lacquered container is topped directly with condiments and sauce. Around the approach to Izumo Taisha, long-established soba restaurants line the streets, making it perfect for dining after a shrine visit. Warm kama-age soba is also popular—served in a bowl with its cooking broth and flavored with sauce and condiments, its simple, rustic deliciousness is exceptional.
