Ishikari Nabe
A Hokkaido regional hotpot woven together with salmon and miso. Its roots trace back to a fisherman's meal at the mouth of the Ishikari River.
Ishikari Nabe is a representative local dish of Hokkaido, a hotpot made by simmering chunks of salmon, tofu, cabbage, long green onion, and other vegetables in a miso-based soup. It is said to have begun with fishermen cooking and eating freshly caught salmon in a large pot at the mouth of the Ishikari River. Adding butter or Japanese pepper as a finishing touch is the Hokkaido way. Authentic Ishikari Nabe can be enjoyed at dining halls within Ishikari City, and especially during autumn's salmon spawning season, fresh salmon is used. The flavor that warms you to the core makes it the perfect dish for Hokkaido's cold winters.
