At Shibukawa Tonya, renovated from a Meiji-era marine products wholesale merchant house, you can savor Aizu's traditional local cuisine. The signature dish, Kozuyu, is a soup simmered in dried scallop broth with taro, carrot, wood ear mushroom, bean tofu, and more than 10 other ingredients. It is an indispensable festive dish for celebrations, weddings, funerals, and festivals throughout the Aizu region. The refined flavor served in vermillion-lacquered bowls evokes the samurai culture of the Aizu Domain. We recommend a course where you can also enjoy other Aizu specialties such as herring pickled with Japanese pepper and glazed dried cod.
