Asahikawa Ramen
Asahikawa ramen characterized by a double soup of pork bone and seafood. The layer of lard on the surface is designed to keep the soup from cooling.
Asahikawa Ramen is a locally-originated ramen from Asahikawa that combines a double soup of pork bone and seafood with low-hydration thin wavy noodles. Its greatest characteristic is the layer of lard floating on the soup surface, which prevents the soup from cooling even in Asahikawa's extreme cold. There are over 100 ramen shops within Asahikawa city, and 8 popular shops are gathered at Asahikawa Ramen Village. Each shop takes pride in their own unique soup and noodles, competing with rich, deep soy sauce-based flavors. It is one of Hokkaido's three greatest ramen, alongside Sapporo miso ramen and Hakodate salt ramen.
