Yokote Yakisoba from Yokote City in Akita Prefecture is a casual local specialty that won the Gold Grand Prix at the B-1 Grand Prix and is now recognized nationwide. The Yokote style consists of simple fried noodles made with thick square noodles seasoned with Worcestershire sauce and topped with cabbage and ground pork, a soft-cooked fried egg, and fukujinzuke. The chewy thick noodles absorb the sauce, and when you break the yolk and mix it in, it transforms into a rich, savory flavor. Approximately 50 restaurants throughout the city serve this dish, and a food walking map is also available.
