Satō Yōsuke, founded in 1860, is a long-established shop located in Inaniwa Town, Yuzawa City, Akita Prefecture—the birthplace of Inaniwa udon. As one of Japan's three greatest udon varieties, Inaniwa udon is meticulously hand-drawn by skilled artisans over 3 days to create dried noodles. Despite their delicate thinness, these noodles possess surprising elasticity and are characterized by a distinctive silky smooth throat sensation. Traditionally eaten as cold zaru udon, they pair outstandingly with sesame miso dipping sauce. The shop also offers factory tours and hand-drawing experiences, allowing visitors to observe the production process firsthand.
